Australia's warm climate and high diurnal temperature variations — the difference between daytime highs and night-time lows — create conditions for intensive interaction between the whisky and the surrounding wood. This accelerates maturation and yields remarkable depth and complexity of flavour even at a relatively young age, compounding with every additional year in cask.
Our Australian single malt whiskies are distilled from locally grown barley, fermented and matured entirely in Australia, with a minimum age of two years and often considerably older. They are available in two signature styles:
Ex-bourbon cask: The classical expression, delivering notes of vanilla, honey, stone fruit and gentle spice — familiar to whisky buyers worldwide and ideal for blending or straight bottling.
Ex-red wine cask (Wet / STC / STR): Australia's signature contribution to the whisky world. Maturation in ex-Shiraz, ex-Cabernet Sauvignon or ex-Pinot Noir barrels imparts rich, dark fruit character — plum, cherry, chocolate — with a distinctly Australian identity that resonates strongly with Asian consumers.
