From Vineyard to Still

Australian brandy begins in the vineyard — and the quality and diversity of Australia's wine regions give its brandy producers an exceptionally broad raw material base to work with. Early Australian brandies were produced largely from muscat grapes, a byproduct of the country's fortified wine industry. Over time, producers shifted toward the same neutral varieties used in Cognac production — colombard, palomino and doradillo — which yield a cleaner, more delicate base spirit that takes well to extended oak maturation.
Today, Australian brandy is produced from a wide range of grape varieties depending on the producer's style and region, including colombard, palomino, doradillo, Chardonnay, Semillon, Muscat, Cabernet Sauvignon and Shiraz. Each variety contributes differently to the final character of the brandy — from the lighter, more floral styles produced from cognac-influenced neutral varieties, through to richer, more fruit-forward expressions that draw on Australia's celebrated red wine grapes.
Distillation takes place in pot stills, column stills or a combination of both. The resulting spirit is aged in oak — most commonly French or American oak barrels — developing complexity, colour and depth over a maturation period that ranges from the regulatory minimum for domestic sale through to many years for premium aged expressions. Australian brandy typically presents with warm amber colour and notes of dried stone fruit, vanilla, oak spice, honey and gentle tannins.

A note on maturation

Within Australia, brandy must be aged in oak for a minimum of two years before it can be sold domestically as brandy.
